Hati Buyah is a traditional Malaysian dish, particularly popular in the state of Kelantan. The dish primarily consists of sliced beef liver that is stir-fried with a variety of local spices, chillies, and a generous amount of grated coconut. The name "Hati Buyah" translates to "Liver Buyah", with "Buyah" referring to the grated coconut used in the dish. It is commonly served as a side dish, often accompanying rice or other main courses.

Recipe

Ingredients:

  • 500 grams of beef liver

  • 2 pieces of bay leaves

  • 2 pieces of lime leaves

  • 2 stalks of lemongrass

  • 1 tablespoon of tamarind water

  • 2 tablespoons of sweet soy sauce

  • 1 teaspoon of salt

  • 1 teaspoon of sugar

  • 500 ml of water

  • 2 tablespoons of cooking oil


Spice Paste:

  • 5 shallots

  • 3 cloves of garlic

  • 3 red chilies

  • 3 bird's eye chilies

  • 3 candlenuts

  • 1/2 teaspoon of shrimp paste


Instructions:

  1. First, prepare the spice paste. Blend shallots, garlic, red chilies, bird's eye chilies, candlenuts and shrimp paste in a blender or food processor until smooth.

  2. Heat the cooking oil in a pan. Add the spice paste, bay leaves, lime leaves, and lemongrass. Sauté until fragrant.

  3. Add the beef liver to the pan. Stir until it changes color.

  4. Add tamarind water, sweet soy sauce, salt, and sugar. Stir well.

  5. Pour in the water, then cook on low heat until the liver is cooked and the water has reduced.

  6. Once the liver is tender and the sauce has thickened, remove from heat.

  7. Your Hati Buyah is ready to serve. It can be enjoyed with warm rice.
