Guiambo is a traditional soup dish originating from Puerto Rico. It is primarily made from okra and various types of meat, including pork, chicken, and seafood. This dish is often seasoned with sofrito, a sauce used as a base in Latin American, Spanish, Italian, and Portuguese cooking. The name "Guiambo" is derived from the Taíno word for okra.
Recipe
Ingredients:
1 pound of beef stew meat
1 tablespoon of vegetable oil
1 onion, chopped
2 cloves of garlic, minced
1 red bell pepper, chopped
1 green bell pepper, chopped
1 pound of okra, chopped
1 can of diced tomatoes
1 can of coconut milk
1 teaspoon of salt
1/2 teaspoon of black pepper
1/2 teaspoon of cayenne pepper
2 cups of water
2 cups of cooked rice
Instructions:
Heat the vegetable oil in a large pot over medium-high heat.
Add the beef stew meat and cook until browned on all sides. Remove the meat from the pot and set aside.
In the same pot, add the chopped onion, garlic, red bell pepper, and green bell pepper. Cook until the vegetables are softened.
Add the chopped okra to the pot and cook for another 5 minutes.
Return the beef stew meat to the pot and add the diced tomatoes, coconut milk, salt, black pepper, and cayenne pepper. Stir to combine all the ingredients.
Add the water to the pot and bring the mixture to a boil. Once boiling, reduce the heat to low and let the stew simmer for about 30 minutes, or until the beef is tender and the flavors have melded together.
Serve the guiambo over cooked rice.
