Groundnut Stew is a traditional African dish, prevalent especially in West Africa, made primarily from groundnuts (peanuts) and meat, usually chicken or mutton. The stew also often includes ingredients such as tomatoes, ginger, garlic, and hot peppers. It is typically served over rice or with a side of bread. The dish is known for its rich, nutty flavor and is a staple in many African diets.
Recipe
Ingredients:
1 cup groundnut (peanut) paste
1 large onion, chopped
2 cloves garlic, minced
1 tablespoon ginger, grated
1-2 hot peppers, chopped
1 cup tomatoes, chopped
2 cups of vegetable broth
1 large eggplant, cut into chunks
1 cup okra, chopped
1 cup of spinach
Salt to taste
2 tablespoons vegetable oil
2 cups of cooked rice
Instructions:
Heat the vegetable oil in a large pot over medium heat.
Add the chopped onions, minced garlic, grated ginger, and chopped hot peppers to the pot. Sauté until the onions become translucent.
Add the chopped tomatoes to the pot and cook until they become soft and start to break down.
Stir in the groundnut paste until it is well mixed with the other ingredients in the pot.
Gradually pour in the vegetable broth, stirring continuously to prevent lumps from forming.
Add the eggplant chunks and okra to the pot. Reduce the heat to low, cover the pot, and let it simmer for about 15 minutes.
Add the spinach to the pot and stir well. Cover the pot again and let it simmer for another 5 minutes.
Season the stew with salt to taste.
Serve the groundnut stew over cooked rice.
