Recipe
Ingredients:
2 lbs beef stew meat
2 onions, chopped
2 cloves garlic, minced
3 tablespoons vegetable oil
2 teaspoons paprika
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon caraway seeds
1 can (14.5 oz) diced tomatoes
1 can (6 oz) tomato paste
2 cups beef broth
2 red bell peppers, chopped
2 potatoes, peeled and chopped
1/4 cup chopped fresh parsley
Instructions:
In a large pot, heat the vegetable oil over medium heat. Add the beef stew meat and brown on all sides. Remove the meat from the pot and set aside.
In the same pot, add the onions and garlic and cook until they are soft and translucent.
Return the meat to the pot and add the paprika, salt, black pepper, and caraway seeds. Stir to combine.
Add the diced tomatoes, tomato paste, and beef broth to the pot. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for 1.5 hours.
After 1.5 hours, add the chopped bell peppers and potatoes to the pot. Cover and let it simmer for another 30 minutes, or until the vegetables are tender.
Stir in the chopped parsley just before serving. Your goulash is ready to serve.
