Goat Water, also known as kiddy stew, is a traditional stew originating from the Caribbean island of Montserrat. It is considered the national dish of Montserrat and is typically consumed during festive occasions. The stew is made primarily from goat meat, breadfruit, vegetables, and a mix of spices. The dish is often served with crusty bread or rice.

Recipe

Ingredients:

  • 2 pounds of goat meat

  • 1 large onion, chopped

  • 2 cloves garlic, minced

  • 2 scotch bonnet peppers, chopped

  • 2 tablespoons of fresh thyme, minced

  • 2 tablespoons of fresh parsley, minced

  • 2 tablespoons of curry powder

  • 1 teaspoon of black pepper

  • 1 teaspoon of salt

  • 1 tablespoon of vegetable oil

  • 1 large tomato, chopped

  • 2 cups of water

  • 2 medium potatoes, cubed

  • 2 medium carrots, sliced

  • 1 bay leaf


Instructions:

  1. Rinse the goat meat and pat dry with paper towels.

  2. In a large bowl, combine the goat meat, onion, garlic, scotch bonnet peppers, thyme, parsley, curry powder, black pepper, and salt. Mix well and let it marinate for at least 1 hour or overnight in the refrigerator.

  3. Heat the vegetable oil in a large pot over medium heat. Add the marinated goat meat and brown on all sides.

  4. Add the chopped tomato to the pot and cook until it becomes soft.

  5. Pour in the water and bring to a boil. Reduce the heat to low, cover the pot, and simmer for about 1 hour, or until the meat is tender.

  6. Add the potatoes, carrots, and bay leaf to the pot. Simmer for another 30 minutes, or until the vegetables are cooked.

  7. Adjust the seasonings if necessary. Remove the bay leaf before serving.
