Gołąbki is a traditional Polish dish made from lightly soft-boiled cabbage leaves wrapped around a filling of minced pork or beef, chopped onions, and rice or barley. The name "gołąbki" means "little pigeons" in Polish, a term of endearment for the dish. After being rolled, the parcels are baked or simmered in a tomato sauce, mushroom sauce, or broth, and often served with a side of bread or potatoes. While most commonly associated with Poland, variations of this dish can be found throughout Eastern and Northern Europe.
Recipe
Ingredients:
12 large cabbage leaves
1 cup cooked rice
1 egg, beaten
1/4 cup milk
1/4 cup minced onion
1 pound lean ground beef
1 1/4 teaspoons salt
1 1/4 teaspoons ground black pepper
1 can (15 ounces) tomato sauce
1 tablespoon brown sugar
1 tablespoon lemon juice
1 teaspoon Worcestershire sauce
Instructions:
Preheat oven to 350 degrees F (175 degrees C).
Cook cabbage in boiling water just enough to soften the leaves. Drain.
In a medium mixing bowl, combine the ground beef, 1 cup cooked rice, onion, egg, salt and pepper, along with 2 tablespoons of tomato sauce. Mix thoroughly.
Divide the beef mixture evenly among the cabbage leaves. Roll and secure them with toothpicks or string.
In a small mixing bowl, combine the remaining tomato sauce, brown sugar, lemon juice and Worcestershire sauce. Mix well and pour over the cabbage rolls.
Place the cabbage rolls in a baking dish, cover and bake for about 60 minutes. Make sure the meat is cooked through by cutting into one of the rolls. Adjust cooking time if necessary.
Serve the rolls hot, drizzled with the tomato sauce from the baking dish.
