Glamorgan Sausages are a traditional Welsh vegetarian dish made primarily from cheese, leeks, and breadcrumbs. The dish derives its name from the historic county of Glamorgan in Wales, where the local cheese was once a key ingredient. The sausages are usually fried until golden brown and are often served with a variety of sauces. Despite being called sausages, they do not contain any meat or sausage casing.
Recipe
Ingredients:
200g breadcrumbs
150g Caerphilly cheese (or mature cheddar if you can't find it)
1 small leek, finely chopped
Handful of chopped fresh parsley
Handful of chopped fresh thyme
2 eggs
1 tsp English mustard
Flour, for dusting
Vegetable oil, for frying
Instructions:
Mix 150g of the breadcrumbs with the cheese, leek, parsley and thyme.
Beat one of the eggs with the mustard, season well and mix with the cheese mixture.
Divide the mixture into 8 and shape each portion into a small sausage.
Beat the remaining egg in a bowl. Put the remaining breadcrumbs and some flour on separate plates.
Roll each sausage in the flour, then the egg, then the breadcrumbs.
Heat some oil in a frying pan and fry the sausages for 10-15 minutes, turning occasionally, until golden brown and crisp.
Serve the sausages hot with some tomato chutney or brown sauce.
