Gatlama is a traditional dish from the Turkish cuisine, specifically popular in the Kilis region. The name 'Gatlama' is derived from the Turkish verb 'katlamak', which means 'to fold', referring to the folding process during its preparation.
Recipe
Ingredients:
500 grams of flour
1 tablespoon of salt
1 tablespoon of sugar
1 tablespoon of instant yeast
300 ml of warm water
1 tablespoon of olive oil
100 grams of butter
2 tablespoons of sesame seeds
Instructions:
In a large bowl, combine the flour, salt, sugar, and instant yeast. Mix until all the dry ingredients are well combined.
Gradually add the warm water to the dry ingredients, mixing continuously until a dough forms.
Once the dough has formed, add the olive oil and knead the dough for about 10 minutes, or until it becomes smooth and elastic.
Cover the dough with a clean kitchen towel and let it rise for about an hour, or until it doubles in size.
After the dough has risen, divide it into small balls and roll each ball out into a thin circle.
Melt the butter and brush each circle with a generous amount of melted butter. Sprinkle sesame seeds on top.
Heat a pan over medium heat and cook each circle for about 2 minutes on each side, or until golden brown.
Serve the Gatlama warm.
