Ingredients:
8 small corn tortillas
2 cups refried beans
2 cups shredded cooked chicken
1 cup shredded cabbage
1 cup diced tomatoes
1 cup diced onions
1/2 cup crumbled queso fresco
1/2 cup chopped fresh cilantro
1 cup salsa
Vegetable oil for frying
Salt to taste
Instructions:
Heat the vegetable oil in a large skillet over medium-high heat.
Fry the tortillas in the hot oil until they are crisp and golden brown. Remove from the skillet and drain on paper towels.
Spread a layer of refried beans on each tortilla.
Top the beans with a layer of shredded chicken.
Sprinkle the chicken with diced tomatoes, diced onions, and shredded cabbage.
Top each garnacha with a sprinkle of queso fresco and chopped fresh cilantro.
Serve the garnaches with salsa on the side for dipping.
