Next Dish: Tagine

Fufu is a staple food common in many countries in Africa such as Ghana, Liberia, Nigeria and Côte d'Ivoire. It is often made by boiling starchy food crops like cassava, yams or plantains and then pounding them into a dough-like consistency. Fufu is typically served with soups or stews, and is eaten by tearing off a small piece, shaping it into a small ball and dipping it into the soup or sauce. Its taste is described as starchy and slightly sour, similar to sourdough bread.

Recipe

Ingredients:

  • 4 ripe plantains

  • 1 cup of water

  • 1 teaspoon of salt


Instructions:

  1. Start by peeling the plantains and cutting them into small chunks.

  2. Place the chunks in a pot, add the water and salt.

  3. Cover the pot and cook on medium heat until the plantains are soft and a bit mushy.

  4. Drain the water and mash the plantains until they become a smooth paste. If it's too hard, you can add a bit of the water you used to boil them.

  5. Once you get a smooth consistency, scoop some of the mixture and roll it into a ball. Repeat this process until all the mixture is used up.

  6. Serve your fufu with any soup or stew of your choice.
