Ingredients:
2 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
1 tablespoon shortening
3/4 cup water
Vegetable oil for frying
Instructions:
In a large bowl, mix together the flour, baking powder, and salt.
Cut in the shortening until the mixture resembles coarse crumbs.
Gradually stir in water until a soft dough is formed.
Turn the dough out onto a floured surface and knead until smooth and elastic, about 5 minutes.
Divide the dough into 8 equal pieces and roll each piece into a thin round.
Heat oil in a deep fryer or large heavy-bottomed pot to 375 degrees F (190 degrees C).
Fry the dough rounds, one at a time, until golden brown on both sides, about 1 minute per side. Drain on paper towels and serve hot.
