Flija is a traditional layered pancake-like dish from Albania and Kosovo. It is made by gradually pouring batter, usually composed of flour, water, and eggs, in a circular pattern over a sač, a special metal lid used for baking. The dish is typically baked using an open fire and is flipped to ensure both sides are cooked evenly. Flija is often served with honey or yogurt and is a staple during social events and celebrations.
Recipe
Ingredients:
1kg flour
500ml water
500ml milk
3 eggs
500g sour cream
500g cottage cheese
Salt
100g melted butter
Instructions:
Mix flour, water, and a pinch of salt in a bowl until it forms a smooth dough. Let it rest for 30 minutes.
While the dough is resting, mix milk, eggs, sour cream, and cottage cheese in another bowl to create the cream mixture.
After the dough has rested, divide it into small balls. Roll out each ball into a thin layer.
Place the first layer of dough on a baking tray. Brush it with melted butter and then spread a layer of the cream mixture on top.
Repeat this process, layering dough and cream mixture, until all ingredients are used. The top layer should be the cream mixture.
Bake in a preheated oven at 200 degrees Celsius for about 2-3 hours, or until the Flija is golden brown.
