Recipe

Ingredients:

  • 1 whole rabbit, cut into pieces

  • 2 onions, finely chopped

  • 4 cloves of garlic, minced

  • 1 cup of white wine

  • 1/2 cup of olive oil

  • 2 tablespoons of tomato paste

  • 1 teaspoon of dried thyme

  • 1 teaspoon of dried rosemary

  • Salt and pepper to taste

  • 1 bay leaf

  • 1 cup of water

  • 2 large potatoes, cut into chunks


Instructions:

  1. Heat the olive oil in a large frying pan or Dutch oven over medium heat.

  2. Add the rabbit pieces to the pan and cook until browned on all sides. Remove the rabbit from the pan and set aside.

  3. In the same pan, add the onions and garlic and cook until they become soft and translucent.

  4. Stir in the tomato paste, dried thyme, dried rosemary, salt, and pepper. Cook for another 2 minutes.

  5. Pour in the white wine, scraping the bottom of the pan to loosen any browned bits.

  6. Return the rabbit pieces to the pan and add the bay leaf. Cover the pan and let it simmer for about 30 minutes.

  7. After 30 minutes, add the chunks of potatoes and water. Cover the pan again and let it simmer for another 30 minutes or until the potatoes are tender and the rabbit is cooked through.

  8. Adjust the seasoning if necessary and serve hot.
