Ingredients:
2 cups of black beans
1 large onion, chopped
2 cloves of garlic, minced
2 tablespoons of palm oil
Salt to taste
2 bay leaves
1 red pepper, chopped
Instructions:
Rinse the beans under cold water until the water runs clear.
Place the beans in a large pot and cover with water. Bring to a boil, then reduce heat to low, cover, and let simmer for about 1 hour, or until the beans are tender.
In a separate pan, heat the palm oil over medium heat. Add the chopped onion and garlic and sauté until they become fragrant and the onions are translucent.
Add the sautéed onions and garlic to the pot of beans. Add the chopped red pepper, bay leaves, and salt to taste.
Stir everything together and let it simmer for another 15-20 minutes for the flavors to meld together.
