Fatteh is a traditional Middle Eastern dish, popular in Lebanese, Palestinian, Syrian, Jordanian and Egyptian cuisines. The dish consists of pieces of fresh, toasted, or stale flatbread covered with other ingredients such as chickpeas, eggplant, or meat, and typically topped with yogurt and nuts. The name "Fatteh" comes from the Arabic word "fatta", meaning to crumble, referring to the crumbled bread used in the dish. Its preparation and ingredients can vary widely by region and personal preference.

Recipe

Ingredients:

  • 2 pita breads

  • 2 cups chickpeas, cooked

  • 2 cloves garlic, minced

  • 1 cup plain yogurt

  • 1/2 cup tahini

  • 1/2 cup lemon juice

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 2 tbsp olive oil

  • 2 tbsp pine nuts

  • 1 tbsp chopped parsley


Instructions:

  1. Preheat your oven to 350°F (175°C). Tear the pita bread into small pieces and spread them out on a baking sheet. Bake for 10-15 minutes, or until crispy.

  2. While the bread is baking, heat up the chickpeas in a saucepan over medium heat. Once they're hot, remove them from the heat.

  3. In a separate bowl, combine the minced garlic, yogurt, tahini, lemon juice, salt, and pepper. Stir until everything is well mixed.

  4. Once the bread is done baking, arrange it at the bottom of a serving dish. Pour the hot chickpeas over the bread.

  5. Pour the yogurt mixture over the chickpeas and bread. Make sure everything is evenly coated.

  6. In a small frying pan, heat the olive oil over medium heat. Add the pine nuts and cook until they're golden brown.

  7. Pour the pine nuts and oil over the yogurt and chickpeas. Sprinkle the chopped parsley on top.

  8. Serve the Fatteh while it's still warm.
