Recipe

Ingredients:

  • 500g dried cannellini beans

  • 1 pig rind

  • 2 cloves of garlic

  • 1 onion

  • 1 carrot

  • 1 celery stalk

  • 1 sprig of rosemary

  • Extra virgin olive oil

  • Salt

  • Pepper


Instructions:

  1. The night before, soak the cannellini beans in a bowl of water.

  2. The next day, drain and rinse the beans.

  3. Cut the pig rind into strips and place in a pot of cold water. Bring to a boil and cook for about 30 minutes.

  4. In a separate pot, sauté the finely chopped onion, carrot, celery and garlic in olive oil.

  5. Add the drained beans to the pot with the sautéed vegetables.

  6. Add the boiled pig rind to the beans and vegetables.

  7. Cover with water and cook for about 2 hours, adding more water if necessary.

  8. Season with salt and pepper to taste.

  9. In the last 30 minutes of cooking, add the rosemary.

  10. Once the beans are cooked and the soup has thickened, remove from heat and let rest for a few minutes before serving.
