Recipe
Ingredients:
12 corn tortillas
3 cups shredded chicken
2 cups shredded Monterey Jack cheese
1 onion, chopped
2 cloves garlic, minced
2 cups enchilada sauce
1/4 cup vegetable oil
Salt and pepper to taste
Fresh cilantro for garnish
Instructions:
Preheat your oven to 375 degrees Fahrenheit.
In a large skillet, heat the vegetable oil over medium heat. Add the onion and garlic and cook until they are soft and fragrant.
Add the shredded chicken to the skillet and season with salt and pepper. Cook until the chicken is heated through.
Dip each tortilla in the enchilada sauce to coat it, then place a spoonful of the chicken mixture in the center. Sprinkle with a bit of cheese, then roll the tortilla up and place it seam-side down in a baking dish. Repeat with the remaining tortillas.
Pour the remaining enchilada sauce over the rolled tortillas in the baking dish, then sprinkle with the remaining cheese.
Bake for 20-25 minutes, or until the cheese is melted and bubbly.
Garnish with fresh cilantro before serving.
