Duruka, also known as Fijian asparagus, is a traditional Fijian dish that is prepared using the unopened flower of a sugar cane shoot. This unique vegetable is harvested before it flowers and is typically cooked in coconut milk with onions, garlic, and chili. It is often served as a side dish or incorporated into a main meal. Its taste is described as a blend of corn, sugar cane, and bamboo shoots.

Ingredients:
1 bunch of Duruka (Sugar Cane Shoots)
1 cup of coconut cream
1 onion, chopped
2 cloves of garlic, minced
Salt to taste
Pepper to taste
1 tablespoon of vegetable oil
Instructions:
Begin by preparing the Duruka. Remove the outer leaves until you reach the tender inner core. Cut off the top and bottom, then slice the core into bite-sized pieces.
Heat the vegetable oil in a pan over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
Add the sliced Duruka to the pan, stirring to combine it with the onion and garlic. Cover the pan and let it simmer for about 15 minutes, or until the Duruka is tender.
Pour the coconut cream into the pan, stirring to combine it with the other ingredients. Season with salt and pepper to taste.
Continue cooking the mixture for another 5 minutes, allowing the flavors to meld together. Serve the Duruka hot, ideally over a bed of rice.
