Ingredients:
5 potatoes
1 onion
2 eggs
3 tablespoons flour
Salt to taste
Pepper to taste
Vegetable oil for frying
Sour cream for serving
Instructions:
Peel and grate the potatoes and onion on a fine grater.
Drain off any excess liquid from the grated potatoes and onion.
Add the eggs, flour, salt, and pepper to the grated potatoes and onion. Mix until well combined.
Heat the vegetable oil in a frying pan over medium heat.
Scoop a tablespoon of the potato mixture into the pan and flatten it with a spatula.
Fry the pancakes on both sides until golden brown, about 4-5 minutes per side.
Remove the pancakes from the pan and drain on paper towels.
Serve the pancakes hot with a dollop of sour cream on top.
