Crni Rižot is a traditional Croatian dish, often known as black risotto. It gets its distinctive black color from the ink of cuttlefish or squid used in its preparation. The dish typically includes other seafood such as mussels, clams, and prawns, along with garlic, wine, and olive oil. Crni Rižot is especially popular along the Dalmatian coast.

Recipe

Ingredients:

  • 1 kilogram of mixed seafood (mussels, clams, prawns, and squid)

  • 300 grams of Arborio rice

  • 1 large onion

  • 3 cloves of garlic

  • 1 bunch of parsley

  • 1 glass of white wine

  • 2 tablespoons of cuttlefish ink

  • 1 liter of fish stock

  • Olive oil

  • Salt and pepper


Instructions:

  1. Clean and prepare your seafood. If you are using squid, cut it into small rings. Devein the prawns and remove the shells but keep them for the stock.

  2. In a large pan, heat the olive oil over medium heat. Add the finely chopped onion, minced garlic, and parsley. Sauté until the onion is translucent.

  3. Add the rice to the pan and stir well, making sure all the grains are coated with the oil. Cook for a couple of minutes.

  4. Pour in the glass of white wine and stir until it is fully absorbed by the rice.

  5. Add the cuttlefish ink to the pan and mix well until the rice is black.

  6. Gradually add the fish stock, one ladle at a time, stirring constantly. Wait until the liquid is absorbed before adding the next ladle.

  7. After about 15 minutes, add the seafood to the pan and mix well. Continue to cook, adding more stock as needed, until the rice is cooked and the seafood is done.

  8. Season with salt and pepper to taste. Serve the risotto hot, garnished with a sprig of parsley.
