Cracked Conch is a traditional dish popular in the Bahamas and the Florida Keys. It is made by tenderizing the meat of the conch, a type of large sea snail, breading it, and then deep frying it until golden brown. The dish is often served with a side of rice, peas, and a spicy Creole sauce. The term "cracked" refers to the process of pounding the conch meat until it is tender.
Recipe
Ingredients:
1 pound conch meat
1 cup flour
1/2 teaspoon salt
1/2 teaspoon black pepper
2 eggs
1 cup milk
1 cup bread crumbs
Vegetable oil for frying
Lemon wedges for serving
Instructions:
Clean the conch meat and pound it with a meat mallet until it's tender.
Cut the conch into bite-sized pieces.
In a shallow dish, mix together the flour, salt, and pepper.
In another dish, beat the eggs and milk together.
In a third dish, place the bread crumbs.
Heat the vegetable oil in a deep fryer or large pot to 375 degrees Fahrenheit.
Dredge each piece of conch first in the flour mixture, then in the egg mixture, and finally in the bread crumbs.
Fry the breaded conch in the hot oil until golden brown, about 3 to 4 minutes.
Drain the fried conch on paper towels to remove excess oil.
Serve hot with lemon wedges.
