Cold noodles are a variety of dishes based on chilled, boiled noodles and often served with a variety of toppings or in a cold broth. Common ingredients include sesame paste, soy sauce, vinegar, and various vegetables or proteins. The dish is especially popular during hot weather due to its refreshing qualities.
Recipe
Ingredients:
200g of Soba noodles
2 Cucumbers
2 Carrots
1 Red bell pepper
2 Spring onions
1/2 cup of Soy sauce
3 tablespoons of Rice vinegar
1 tablespoon of Sesame oil
1 tablespoon of Honey
2 Garlic cloves, minced
1 tablespoon of grated Ginger
Sesame seeds for garnish
Instructions:
Cook the soba noodles according to the package instructions. Once cooked, rinse under cold water until cool. Drain and set aside.
Peel and julienne the cucumbers, carrots, and red bell pepper. Thinly slice the spring onions.
In a small bowl, mix together the soy sauce, rice vinegar, sesame oil, honey, minced garlic, and grated ginger to make the dressing.
In a large bowl, combine the cooled noodles, prepared vegetables, and dressing. Toss until everything is well mixed and coated in the dressing.
Chill in the refrigerator for at least 1 hour before serving.
Before serving, sprinkle with sesame seeds for garnish.
