Codfish Breakfast is a traditional Jamaican dish typically consumed in the morning. It consists of salted codfish sautéed with boiled ackee, onions, Scotch Bonnet peppers, tomatoes, and spices. It is often served with breadfruit, hard dough bread, dumplings, or boiled green bananas. This dish is also considered Jamaica's national dish.

Recipe

Ingredients:

  • 2 pounds of salted codfish

  • 1 onion, finely chopped

  • 2 cloves of garlic, minced

  • 2 tablespoons of vegetable oil

  • 1 bell pepper, chopped

  • 2 tomatoes, chopped

  • 4 boiled potatoes, diced

  • 1/4 teaspoon of black pepper

  • 1/4 teaspoon of paprika

  • 2 green onions, chopped

  • 4 eggs


Instructions:

  1. Soak the codfish in cold water for at least 24 hours, changing the water several times to remove most of the salt.

  2. After soaking, boil the codfish for about 20 minutes until it becomes flaky. Then, drain and set aside.

  3. In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent.

  4. Add the chopped bell pepper and tomatoes to the skillet and cook for another 5 minutes.

  5. Flake the codfish with a fork and add it to the skillet. Stir well to combine.

  6. Add the diced boiled potatoes to the skillet and season with black pepper and paprika. Cook for about 10 minutes, stirring occasionally.

  7. In a separate pan, scramble the eggs and then add them to the skillet. Mix well.

  8. Garnish with chopped green onions before serving. Enjoy your codfish breakfast.
