Ciorbă de burtă is a traditional Romanian soup made primarily from beef tripe. The dish is known for its sour and garlicky flavor, typically achieved using vinegar and garlic sauce. Other ingredients often include vegetables, sour cream, and hot chili peppers. The soup is traditionally served with a side of hot peppers and is considered a hangover remedy in Romanian folklore.

Recipe

Ingredients:

  • 1 kg of beef tripe

  • 2 carrots

  • 2 parsnips

  • 1 onion

  • 1 bell pepper

  • 1 celery root

  • 1 bunch of parsley

  • 1 bunch of lovage

  • 1 bunch of celery

  • 2 tablespoons of vegetable oil

  • 2 cloves of garlic

  • 2 egg yolks

  • 200 ml of sour cream

  • 1 tablespoon of vinegar

  • Salt and pepper to taste


Instructions:

  1. Clean the beef tripe thoroughly and then boil it in a pot with a pinch of salt for about 2 hours. Once it's boiled, cut it into small pieces.

  2. In another pot, heat the vegetable oil and sauté the finely chopped onion, bell pepper, carrots, parsnips, and celery root. Add the chopped beef tripe to the pot and mix everything together.

  3. Fill the pot with water until all the ingredients are covered and let it simmer for about 1 hour.

  4. In the meantime, prepare the 'dressing' for the soup. Crush the garlic and mix it with the egg yolks and sour cream until you get a smooth paste. Gradually add some soup from the pot to the paste, stirring continuously to prevent the eggs from curdling.

  5. After the soup has simmered for 1 hour, add the 'dressing' to the pot while stirring. Let it simmer for another 10 minutes.

  6. Add the vinegar, salt, and pepper to taste. Finally, add the chopped parsley, lovage, and celery to the soup.

  7. Serve the soup hot, preferably with a side of hot peppers and fresh bread.
