Chipa is a type of small, baked, cheese-flavored roll, a popular snack and breakfast food in Paraguay. Its origins can be traced back to the indigenous Guarani people, and it is also widely consumed in the northeastern Argentina, northern Uruguay and southwestern Brazil. The dough is made from starch (usually cassava but also corn or maize), cheese, eggs and fat (usually lard or butter). Chipa is often shaped into a ring or a half-moon, and has a distinctive chewy and dense texture.
Recipe
Ingredients:
500 grams of starch
1 teaspoon of salt
100 grams of grated cheese
3 eggs
200 grams of butter
1 cup of milk
1 tablespoon of anise seeds
Instructions:
Preheat the oven to 180 degrees Celsius and prepare a baking tray with parchment paper.
In a large bowl, mix the starch and salt. Add the grated cheese and mix well.
In another bowl, beat the eggs and add them to the starch and cheese mixture.
Melt the butter and add it to the mixture, then add the milk and anise seeds and mix until you get a homogeneous dough.
Make small balls with the dough and place them on the prepared baking tray.
Bake for about 15 to 20 minutes or until they are golden brown. Let them cool before serving.
