Chili Crab is a popular seafood dish originating from Singapore. It is made from mud crabs that are stir-fried in a semi-thick, sweet and savory tomato and chili-based sauce. Despite its name, chili crab is not a very spicy dish, it is more sweet than spicy. It is often accompanied by steam or deep fried buns known as mantou.
Recipe
Ingredients:
2 large mud crabs
1/2 cup cornstarch
1 cup vegetable oil for frying
6 cloves garlic, minced
1 thumb-sized piece of ginger, minced
4 red chili peppers, chopped
4 tablespoons ketchup
2 tablespoons oyster sauce
1 tablespoon soy sauce
1/2 cup water
1 large egg, beaten
2 stalks green onions, chopped
1/2 cup fresh cilantro leaves
Instructions:
Clean the crabs and cut into pieces.
Coat the crab pieces with cornstarch.
Heat the oil in a large pan or wok over medium heat. Fry the crab pieces until they turn red. Remove and set aside.
In the same pan, sauté the garlic, ginger, and chili peppers until fragrant.
Add the ketchup, oyster sauce, soy sauce, and water to the pan. Stir well.
Add the fried crab pieces to the pan. Mix well to ensure the crab pieces are coated with the sauce. Cover the pan and simmer for about 10 minutes.
Pour the beaten egg over the crab. Stir well until the egg is fully cooked and the sauce has thickened.
Garnish with the chopped green onions and cilantro leaves before serving.
