Chilaquiles is a traditional Mexican dish typically made from lightly fried corn tortillas cut into quarters and topped with green or red salsa. The dish is simmered until the tortilla starts softening, and is often garnished with crema, shredded queso fresco, raw onion rings and avocado slices. Chicken or beef and refried beans can also be added to the dish. Chilaquiles are commonly consumed for breakfast or brunch, and can also be served as a side dish.
Recipe
Ingredients:
1 bag of tortilla chips
1 jar of salsa (red or green, your choice)
1 cup of shredded chicken (optional)
1 cup of shredded cheese (Monterey Jack, Cheddar, or a Mexican blend)
1/2 cup of sour cream
1/4 cup of chopped fresh cilantro
1/4 cup of chopped onion
1 avocado, sliced
2 eggs (optional)
Salt to taste
Oil for frying
Instructions:
Preheat the oven to 375 degrees F (190 degrees C).
Spread half of the tortilla chips in a single layer in a baking dish.
Spoon half of the salsa evenly over the chips.
Sprinkle half of the shredded chicken and half of the cheese over the salsa-covered chips.
Repeat with another layer of chips, salsa, chicken, and cheese.
Bake in the preheated oven until cheese is melted and bubbling, about 20 minutes.
While the chilaquiles are baking, fry two eggs in a small amount of oil, seasoning with salt to taste.
Remove chilaquiles from the oven and top with fried eggs, sour cream, chopped onion, cilantro, and avocado slices.
Serve hot. Enjoy your homemade chilaquiles!
