Chifrijo is a popular Costa Rican dish typically served in a bowl. It is a combination of chicharrones (fried pork belly or pork rinds), frijoles (beans), rice, and pico de gallo (a fresh salsa). The dish is often topped with avocado and accompanied by tortilla chips. Chifrijo is named after its creator, Miguel Cordero, combining the names of its main ingredients, chicharrones and frijoles.
Recipe
Ingredients:
1 cup of cooked rice
1 cup of cooked beans
1 cup of diced pork belly or pork ribs
1 cup of pico de gallo (fresh salsa)
1 cup of tortilla chips
1 avocado, sliced
Lime wedges
Salt to taste
Fresh cilantro, chopped
Instructions:
Cook the rice and beans separately according to package instructions. Set aside.
Season the pork with salt and cook it in a pan over medium heat until it's crispy and fully cooked.
Prepare the pico de gallo by combining diced tomatoes, onions, cilantro, lime juice, and salt.
To serve, layer the cooked rice, beans, crispy pork, and pico de gallo in a bowl.
Top with avocado slices and fresh cilantro. Serve with tortilla chips and lime wedges on the side.
