Champ is a traditional Irish dish, primarily consisting of mashed potatoes and spring onions (scallions). Recipe
Ingredients:
2 pounds of potatoes
1 cup of milk
4 scallions
1/2 cup of butter
Salt and pepper to taste
Instructions:
Peel and cut the potatoes into chunks. Place them in a large pot, cover with water, and bring to a boil. Cook until the potatoes are tender.
While the potatoes are cooking, chop the scallions, using both the white and green parts. Add them to a small saucepan with the milk. Simmer gently until the scallions are soft.
Drain the cooked potatoes and return them to the pot. Mash them until they are smooth.
Pour the milk and scallion mixture into the potatoes, stirring well to combine.
Add the butter, salt, and pepper to the pot. Stir until the butter is melted and the seasonings are well distributed.
Serve the champ hot, with additional butter on top if desired.
