Chakhokhbili is a traditional Georgian dish primarily made from chicken and a variety of herbs and spices. The name originates from the Georgian word "khokhobi" which means pheasant, as the dish was originally made with this bird. The chicken is typically stewed with tomatoes, onions, garlic, and a distinct blend of herbs such as coriander, dill, and parsley. It is often served with bread or over rice, and is a staple in Georgian cuisine.
Recipe
Ingredients:
1.5 kg of chicken
4 large tomatoes
3 large onions
3 cloves of garlic
2 bell peppers
Fresh herbs (parsley, dill, cilantro)
1 tsp of ground coriander
1/2 tsp of ground black pepper
Salt to taste
3 tbsp of vegetable oil
Instructions:
Cut the chicken into pieces and season with salt and pepper.
Heat the vegetable oil in a large pan and add the chicken. Cook until it becomes golden brown.
While the chicken is cooking, chop the onions, bell peppers, and tomatoes.
Once the chicken is browned, remove it from the pan and set it aside.
In the same pan, add the onions and cook until they become translucent.
Add the bell peppers to the pan and cook until they soften.
Add the tomatoes to the pan, cover, and let it simmer for about 10 minutes.
Return the chicken to the pan, add the ground coriander, and mix well.
Cover the pan and let it simmer for about 20 minutes.
While the chicken is simmering, chop the fresh herbs and garlic.
After 20 minutes, add the chopped herbs and garlic to the pan, mix well, and let it simmer for another 5 minutes.
Taste and adjust the seasoning if necessary.
Serve the Chakhokhbili hot, ideally with fresh bread.
