Chakchouka, also spelled Shakshouka, is a North African and Middle Eastern dish made from simple, healthy ingredients. It primarily consists of tomatoes, onions, peppers, spices, and eggs, all cooked in one skillet. The eggs are poached directly in the tomato mixture, creating a hearty and flavorful dish. It is often served for breakfast, but can also be enjoyed as a lunch or dinner meal.

Recipe

Ingredients:

  • 2 tablespoons olive oil

  • 1 large onion, chopped

  • 1 bell pepper, chopped

  • 2 cloves of garlic, minced

  • 1 teaspoon cumin

  • 1 teaspoon paprika

  • 1/4 teaspoon cayenne pepper

  • 1 can (14 ounces) diced tomatoes

  • Salt and pepper to taste

  • 4-6 eggs

  • Fresh parsley or cilantro for garnish


Instructions:

  1. Heat olive oil in a large skillet over medium heat.

  2. Add the onion and bell pepper to the skillet and sauté until they begin to soften, about 5 minutes.

  3. Add the garlic, cumin, paprika, and cayenne pepper to the skillet, stirring to combine. Cook for another minute until the garlic is fragrant.

  4. Pour in the diced tomatoes, including the juice. Season with salt and pepper. Let the mixture simmer for about 10-15 minutes, or until it starts to reduce.

  5. Make small wells in the tomato mixture and carefully crack the eggs into each well. Cover the skillet and let it cook for about 5-7 minutes, or until the eggs are cooked to your liking.

  6. Garnish with fresh parsley or cilantro before serving. Enjoy your Chakchouka with warm bread.
