Cassava Pie is a traditional dish popular in the Caribbean and South America, primarily made from the root vegetable cassava, also known as yuca or manioc. This dish is often sweetened with sugar and coconut, and occasionally includes meat, making it a unique blend of sweet and savory flavors. The cassava is grated, squeezed of its juice, and then combined with other ingredients before being baked until golden. It is often served during holidays and special occasions.
Recipe
Ingredients:
2 pounds cassava
1 cup sugar
1/2 cup unsalted butter, melted
1 can (14 oz) sweetened condensed milk
1 can (14 oz) coconut milk
6 eggs
1/2 cup shredded coconut
Instructions:
Preheat your oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
Peel the cassava and grate it. You should have about 6 cups of grated cassava.
In a large bowl, combine the grated cassava, sugar, and melted butter. Mix well.
Add the sweetened condensed milk, coconut milk, and eggs to the bowl. Mix until everything is well combined.
Pour the mixture into the prepared baking dish. Sprinkle the shredded coconut evenly over the top.
Bake in the preheated oven for about 1 hour, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Allow the pie to cool in the dish for a few minutes before slicing and serving. Enjoy your Cassava Pie.
