carne-asada

Next Dish: Caldo de Mancarra

Carne Asada, which translates to "grilled meat", is a dish of marinated, grilled beef popular in Latin American cuisine, particularly in Mexico. It typically uses thin cuts of beef, such as skirt steak or flank steak, which are marinated in a mixture of lime juice, garlic, and spices before being grilled. Carne Asada is often served in tacos, burritos, or on its own with sides like rice, beans, and guacamole. It is also a common choice for social gatherings and celebrations due to its communal cooking style.

Recipe

Ingredients:

  • 2 pounds flank or skirt steak

  • 1/4 cup olive oil

  • 1/4 cup orange juice

  • 2 limes, juiced

  • 4 cloves garlic, minced

  • 1/2 cup soy sauce

  • 1 teaspoon chili powder

  • 1 teaspoon ground cumin

  • 1 teaspoon paprika

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon white pepper

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon dried oregano

  • 1/2 teaspoon ground coriander

  • Fresh cilantro, chopped (optional for garnish)

Instructions:

  1. In a large bowl, whisk together olive oil, orange juice, lime juice, minced garlic, soy sauce, chili powder, cumin, paprika, black pepper, white pepper, onion powder, oregano, and coriander.

  2. Place the steak in a large dish or zip-top bag. Pour the marinade over the steak and turn to coat. Cover and refrigerate for at least 1 hour, or up to 24 hours.

  3. Preheat a grill or grill pan over medium-high heat.

  4. Remove the steak from the marinade, letting the excess drip off. Grill the steak for 5-7 minutes per side for medium-rare, or until it reaches your desired level of doneness.

  5. Let the steak rest for 10 minutes before slicing against the grain.

  6. Garnish with fresh chopped cilantro, if desired, and serve.
