Next Dish: Caldo Verde

Byrek, also known as Börek, is a family of baked filled pastries made of a thin flaky dough known as phyllo or yufka. It is of Ottoman origin and can be found in the cuisines of the former Ottoman Empire from the Middle East to the Balkans and Central Europe. The filling can include cheese, spinach, minced meat, or vegetables. The dish is often served in pieces, accompanied by yogurt.

Recipe

Ingredients:

  • 2 packs of phyllo dough

  • 1 cup of feta cheese

  • 1 cup of ricotta cheese

  • 2 eggs

  • 1/4 cup of olive oil

  • 1/4 cup of butter, melted

  • 1 cup of spinach, cooked and drained


Instructions:

  1. Preheat your oven to 350 degrees Fahrenheit.

  2. In a bowl, mix together the feta cheese, ricotta cheese, and one egg until well combined.

  3. Lay out a sheet of phyllo dough and brush it with the melted butter.

  4. Place a spoonful of the cheese mixture onto the dough and spread it out evenly.

  5. If using spinach, place a small amount on top of the cheese mixture.

  6. Roll the dough up into a log, then coil it into a spiral shape.

  7. Place the spiral on a baking sheet lined with parchment paper.

  8. Repeat with the remaining dough and cheese mixture.

  9. In a small bowl, beat the remaining egg with the olive oil. Brush this mixture over the top of the spirals.

  10. Bake for about 30 minutes, or until the tops are golden brown.

  11. Allow to cool slightly before serving.
