butter-tarts

Next Dish: Banitsa

Butter tarts are a type of small pastry that is considered a quintessential Canadian dessert. The tart consists of a filling of butter, sugar, and eggs in a pastry shell, often with additional ingredients such as raisins or pecans. It is similar to the American pecan pie but is distinguished by its smaller, individual serving size. The origins of the butter tart can be traced back to pioneer cookbooks of the late 19th century.

Recipe

Ingredients:

  • 1/2 cup unsalted butter, softened

  • 1 cup brown sugar

  • 2 eggs

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon salt

  • 1 cup raisins

  • 1/2 cup chopped walnuts

  • 1/2 cup corn syrup

  • 12 unbaked tart shells

Instructions:

  1. Preheat your oven to 375 degrees F (190 degrees C).

  2. In a large bowl, cream together the butter, sugar, and eggs until the mixture is smooth.

  3. Stir in the vanilla extract, salt, raisins, walnuts, and corn syrup to create a well-mixed filling.

  4. Spoon the filling into the tart shells, filling them about 2/3 of the way full.

  5. Bake the tarts in the preheated oven for 15-20 minutes, or until the tart shells are golden brown and the filling is set.

  6. Allow the tarts to cool in the pan for 5 minutes before removing them to a wire rack to cool completely. Enjoy!
