Boxty is a traditional Irish potato pancake. The name 'boxty' is derived from the Irish phrase 'arán bocht tí', meaning "poor-house bread". Recipe
Ingredients:
2 medium potatoes
2 tablespoons flour
2 tablespoons butter
Salt to taste
1/4 cup milk
Instructions:
Peel and grate one of the potatoes into a bowl.
Boil the other potato until soft, then mash it in a separate bowl.
Combine the grated and mashed potatoes.
Stir in the flour and salt.
Heat butter in a frying pan over medium heat.
Spoon the potato mixture into the pan and flatten with a spatula.
Cook until golden brown, about 4 minutes on each side.
Gradually add the milk, stirring constantly, until the mixture is thick and creamy.
Serve hot.
