Boxty is a traditional Irish potato pancake. The dish is primarily made from finely grated, raw potato and mashed potato mixed with flour, baking soda, buttermilk and occasionally egg, then fried on a griddle. The name 'boxty' is derived from the Irish phrase 'arán bocht tí', meaning "poor-house bread". It is popularly consumed as a side dish, breakfast item, or used as a wrap in some modern interpretations.

Recipe

Ingredients:

  • 2 medium potatoes

  • 2 tablespoons flour

  • 2 tablespoons butter

  • Salt to taste

  • 1/4 cup milk


Instructions:

  1. Peel and grate one of the potatoes into a bowl.

  2. Boil the other potato until soft, then mash it in a separate bowl.

  3. Combine the grated and mashed potatoes.

  4. Stir in the flour and salt.

  5. Heat butter in a frying pan over medium heat.

  6. Spoon the potato mixture into the pan and flatten with a spatula.

  7. Cook until golden brown, about 4 minutes on each side.

  8. Gradually add the milk, stirring constantly, until the mixture is thick and creamy.

  9. Serve hot.
