Bouneschlupp is a traditional Luxembourgish soup primarily composed of green beans, potatoes, onions, and bacon or sausage. The ingredients are simmered together in a broth, often seasoned with marjoram and savory. The dish is typically served with fresh bread and is a popular comfort food in Luxembourg. The name Bouneschlupp is derived from the Luxembourgish words for bean ('Boun') and slurp ('schlupp').
Recipe
Ingredients:
500g green beans
2 large potatoes
2 large carrots
1 large onion
200g smoked bacon
1.5 liters of chicken broth
2 leeks
2 tablespoons of butter
2 tablespoons of fresh chopped parsley
Salt and pepper to taste
4-6 sausages (optional)
150ml of cream (optional)
Instructions:
Chop the onion, carrots, leeks, and potatoes into small pieces.
Cut the green beans into 1 cm pieces.
Cut the bacon into small cubes.
In a large pot, melt the butter over medium heat.
Add the bacon and onion to the pot and cook until the onion is translucent.
Add the carrots, leeks, and potatoes to the pot and cook for another 5 minutes, stirring occasionally.
Add the green beans and chicken broth to the pot and bring to a boil.
Reduce the heat to low, cover the pot, and simmer for about 20 minutes, or until the vegetables are tender.
If using, add the sausages to the pot and cook for another 10 minutes.
Season with salt and pepper to taste.
If using, stir in the cream and cook for another 2-3 minutes, until heated through.
Sprinkle with fresh chopped parsley before serving.
