Borscht is a traditional Eastern European soup, most commonly associated with Ukrainian cuisine. It is primarily made from beetroots, which give the soup its distinctive red color. Other ingredients often include potatoes, cabbage, and meat, though vegetarian versions are also common. Borscht is typically served hot with a dollop of sour cream and a side of bread.
Recipe
Ingredients:
1 large or 2 small beets
2 large or 3 medium potatoes
4 cups of beef broth
2 tablespoons of vegetable oil
1 medium onion
2 carrots
Half a head of cabbage
2 bay leaves
2 tablespoons of tomato paste
4 cloves of garlic
Salt and pepper to taste
2 tablespoons of vinegar
1 teaspoon of sugar
Fresh dill, parsley, and green onion for garnish
Sour cream for serving
Instructions:
Peel and cut the beets into thin strips. Set aside.
Peel and cut the potatoes into bite-sized pieces. Set aside.
Heat the vegetable oil in a large pot over medium heat. Add the onion and carrots, sauté until they begin to soften.
Stir in the beets, cabbage, bay leaves, tomato paste, and garlic. Season with salt and pepper, then cook for another 5-7 minutes.
Add the beef broth and potatoes to the pot. Bring the mixture to a boil, then reduce the heat to low and simmer for about 20 minutes, or until the potatoes are cooked through.
Stir in the vinegar and sugar. Taste and adjust the seasoning if necessary.
Serve the borscht hot, garnished with the fresh dill, parsley, and green onion. Add a dollop of sour cream on top if desired.
