Bori Bori is a traditional Paraguayan soup made with beef, vegetables, and cornmeal-cheese dumplings. The name of the dish comes from the Guarani word for "ball", referring to the round dumplings. Recipe
Ingredients:
2 tablespoons vegetable oil
1 large onion, chopped
4 cloves garlic, minced
2 large tomatoes, chopped
2 pounds boneless chicken, cut into chunks
8 cups chicken broth
1 cup chopped fresh cilantro
Salt and pepper to taste
1 cup cornmeal
1/2 cup grated Parmesan cheese
1 egg
1/4 cup chopped fresh parsley
1/4 cup vegetable oil
1/4 cup water
Instructions:
Heat 2 tablespoons of vegetable oil in a large pot over medium heat. Add the onion and garlic; cook and stir until fragrant.
Add the tomatoes and cook until they begin to break down. Stir in the chicken, and cook until it turns white.
Pour in the chicken broth and bring to a boil. Stir in the cilantro, and season with salt and pepper. Reduce heat to low and simmer for about 30 minutes.
While the soup is simmering, make the dumplings. In a medium bowl, mix together the cornmeal, Parmesan cheese, egg, parsley, oil, and water to form a stiff dough.
Roll the dough into small balls, and drop them into the simmering soup. Allow them to cook, stirring occasionally, for about 15 minutes.
Serve the soup hot, making sure to get plenty of dumplings in each serving.
