Bolani is a traditional Afghan flatbread, typically stuffed with a variety of ingredients like potatoes, lentils, pumpkin, or spinach. It is often served as a street food and is popular during special occasions and gatherings. The preparation involves frying the stuffed bread in oil until it turns golden brown. It is typically served with plain yogurt or mint sauce.
Recipe
Ingredients:
2 cups of flour
1 cup of water
1 teaspoon of salt
2 potatoes
1 onion
1/2 cup of chopped cilantro
1/2 cup of chopped leeks
1/2 cup of chopped spring onions
1 teaspoon of turmeric
1 teaspoon of black pepper
Oil for frying
Instructions:
In a large bowl, mix the flour and salt. Slowly add the water and knead until a dough forms. Cover and let it rest for about 30 minutes.
While the dough is resting, peel and boil the potatoes until they are soft. Drain and mash them.
Chop the onion, cilantro, leeks, and spring onions and mix them into the mashed potatoes. Add the turmeric and black pepper and mix well.
Divide the dough into small balls and roll each one out into a thin circle.
Place some of the potato mixture onto one half of each circle, leaving a small border around the edge. Fold the other half over and seal the edges by pressing with a fork.
Heat some oil in a frying pan and fry each Bolani until it is golden brown on both sides.
Serve the Bolani hot with yogurt or chutney. Enjoy!
