Bigos, also known as hunter's stew, is a traditional Polish dish of chopped meat stewed with sauerkraut and shredded fresh cabbage. The dish is usually enriched with a variety of other ingredients such as mushrooms, onions, and spices. It is often prepared in large quantities and consumed over a period of several days, with the flavor intensifying each time it is reheated. Bigos is considered a national dish of Poland and is served at many festivals and holiday celebrations.
Recipe
Ingredients:
500g sauerkraut
200g fresh white cabbage
200g smoked sausage
200g pork shoulder
100g dried mushrooms
2 onions
2 cloves of garlic
1 bay leaf
5 allspice berries
2 tablespoons tomato paste
1 teaspoon marjoram
Salt and pepper to taste
1 glass of red wine
2 tablespoons of vegetable oil
Instructions:
Rinse the sauerkraut under cold water and drain it.
Shred the fresh cabbage and mix it with the sauerkraut.
Chop the onions and garlic, and slice the sausage and pork into bite-sized pieces.
Soak the dried mushrooms in warm water for about 20 minutes, then drain and chop them.
Heat the oil in a large pot and add the onions, garlic, sausage, and pork. Cook until they are browned.
Add the cabbage mixture, mushrooms, bay leaf, allspice, tomato paste, marjoram, salt, and pepper to the pot. Mix well.
Pour the wine into the pot and bring the mixture to a boil.
Reduce the heat to low, cover the pot, and let it simmer for about 2-3 hours, stirring occasionally.
Adjust the seasoning if necessary, and serve the bigos hot.
