Bhuna Khichuri is a traditional Bangladeshi dish made from rice and lentils, often cooked with ghee, spices, and sometimes meat or vegetables. The word 'Bhuna' signifies a cooking process where the food is fried for an extended period, which provides a distinctive flavor. This dish is typically served during lunch or dinner and is a staple during the rainy season and religious festivals. Its Indian counterpart is known as 'Khichdi'.
Recipe
Ingredients:
1 cup Basmati Rice
1/2 cup Moong Dal
2 tablespoons Ghee
1 teaspoon Cumin seeds
2 Bay leaves
4 Cloves
4 Green Cardamoms
1 Cinnamon Stick
2 Dry Red Chillies
1 large Onion, finely chopped
1 tablespoon Ginger-Garlic Paste
1/2 teaspoon Turmeric Powder
1 teaspoon Red Chilli Powder
Salt to taste
1 large Tomato, chopped
1/2 cup Green Peas
1 large Potato, cubed
3 cups Water
Fresh Coriander Leaves for garnish
Instructions:
Wash the basmati rice and moong dal together. Soak them in enough water for 30 minutes.
Heat ghee in a pan. Add cumin seeds, bay leaves, cloves, green cardamoms, cinnamon stick and dry red chillies.
Once the spices start to crackle, add the chopped onion. Fry until the onion turns golden brown.
Add ginger-garlic paste and sauté for a couple of minutes until the raw smell goes away.
Add turmeric powder, red chilli powder and salt. Mix well.
Add the chopped tomato and cook until it turns mushy.
Drain the water from the soaked rice and dal. Add them to the pan and mix well.
Add green peas and potato. Mix everything together.
Pour in the water and bring the mixture to a boil.
Lower the heat, cover the pan and cook until the rice and dal are cooked and all the water is absorbed.
Garnish with fresh coriander leaves before serving. Enjoy your Bhuna Khichuri hot.
