Begova Čorba is a traditional Bosnian soup, often referred to as Bey's Soup. It is named after the Ottoman governors, known as Beys, and is considered a Bosnian specialty. The hearty soup typically includes chicken, vegetables, okra, and flour. It is often served as a starter dish in Bosnian cuisine, particularly during the cold winter months.

Recipe

Ingredients:

  • 500g of lamb (bone-in)

  • 2 onions

  • 2 carrots

  • 2 potatoes

  • 2 bell peppers

  • 2 tomatoes

  • 2 tablespoons of flour

  • 2 tablespoons of butter

  • 1 egg yolk

  • 200ml of sour cream

  • 1 bunch of parsley

  • Salt and pepper to taste


Instructions:

  1. Clean and wash the lamb, then put it in a pot, cover with water and cook until the meat is tender. Remove the meat from the bone and cut it into small pieces.

  2. In the same water where the lamb was cooked, add chopped onions, carrots, potatoes, peppers and tomatoes. Cook until the vegetables are soft.

  3. In a separate pan, melt the butter, add flour and stir constantly until it gets a golden color. Add some soup from the pot into this mixture to thin it out, then pour it back into the pot.

  4. Beat the egg yolk with sour cream and gradually add to the soup, stirring constantly.

  5. Add the lamb pieces back into the soup, season with salt and pepper, and cook for another 10 minutes.

  6. Before serving, sprinkle with chopped parsley.
