Recipe

Ingredients:

  • 2 cups Basmati rice

  • 3 cups water

  • 1 large onion

  • 2 cloves garlic

  • 1 large tomato

  • 1 large potato

  • 1 large carrot

  • 1 cup green peas

  • 1 bell pepper

  • 1/2 teaspoon turmeric

  • 1/2 teaspoon cumin

  • 1/2 teaspoon coriander

  • Salt to taste

  • 2 tablespoons vegetable oil


Instructions:

  1. Rinse the basmati rice under cold water until the water runs clear.

  2. Boil the rice in 3 cups of water until it is half cooked, then drain and set aside.

  3. Chop the onion, garlic, tomato, potato, carrot, and bell pepper into small pieces.

  4. Heat the vegetable oil in a large pan over medium heat.

  5. Add the chopped onion and garlic to the pan and sauté until they are golden brown.

  6. Add the chopped tomato, potato, carrot, and bell pepper to the pan and sauté until they are soft.

  7. Add the green peas, turmeric, cumin, coriander, and salt to the pan and stir well.

  8. Add the half cooked rice to the pan and stir gently to combine all the ingredients.

  9. Cover the pan and let it cook on low heat for about 20 minutes, or until the rice is fully cooked and has absorbed all the flavors.

  10. Serve the Bariis Iskukaris hot with a side of salad or meat.
