Bara Brith, also known as "speckled bread", is a traditional Welsh sweet bread. It's made from a rich yeast dough that includes dried fruit, tea, and often marmalade or brown sugar. The ingredients are soaked overnight in tea, giving the bread its distinctive moist texture and deep, complex flavors. It's traditionally served sliced and buttered, often accompanying a cup of tea.
Recipe
Ingredients:
450g dried mixed fruit
300ml hot tea
2 tsp mixed spice
175g light muscovado sugar
1 egg, beaten
225g self-raising flour
Instructions:
Soak the dried fruit in the hot tea and leave overnight.
Preheat the oven to 170C/150C Fan/Gas 3. Grease and line a 900g/2lb loaf tin.
Stir the mixed spice and sugar into the fruit and tea mixture, then add the beaten egg.
Fold in the flour and mix well.
Spoon the mixture into the prepared tin and smooth the surface.
Bake for 1½ hours or until a skewer inserted into the middle comes out clean.
Leave to cool in the tin for 10 minutes, then turn out and cool on a wire rack.
Slice and serve buttered, if you like.
