Recipe

Ingredients:

  • 2 cups of corn dough

  • 1 cup of cassava dough

  • 1 teaspoon of salt

  • Water


Instructions:

  1. Mix corn dough with water and sieve out the chaff. You should get a smooth mixture.

  2. In a separate bowl, mix cassava dough with a bit of water and add it to the corn dough mixture.

  3. Stir the mixture well and place on the fire. The mixture should be quite thick.

  4. Keep stirring until the mixture starts to thicken more and starts to form.

  5. Add salt and continue stirring.

  6. When the mixture is thick and smooth, scoop some of the mixture and add a bit of water. Stir until it is well mixed.

  7. Put the mixture back on the fire and stir continuously until it forms a smooth, thick, and elastic texture.

  8. Mold the banku into serving sizes with a ladle or wooden spoon and serve with soup, stew, or a sauce of your choice.
