Bandeja Paisa is a traditional Colombian dish from the Andean region, especially popular in the Paisa region. The dish is typically served in a platter and consists of a variety of foods including red beans cooked with pork, white rice, ground meat, chicharrón, fried egg, plantain, chorizo, arepa, hogao sauce, black pudding and avocado. It is known for its generous portions and is considered a cultural icon of Colombia. The name "Bandeja Paisa" refers to the Paisa region, and "Bandeja" means platter in Spanish.

Recipe

Ingredients:

  • 1 cup of red beans

  • 2 green plantains

  • 1 cup of white rice

  • 2 eggs

  • 1/2 pound of minced meat

  • 1/2 pound of pork belly

  • 1 chorizo sausage

  • 1 slice of black pudding

  • 1 avocado

  • 1 tomato

  • 2 slices of bread

  • 1 tablespoon of butter

  • Salt to taste


Instructions:

  1. Soak the red beans overnight in a bowl of water.

  2. The next day, cook the beans in a pressure cooker for about 45 minutes or until they are soft. Add salt to taste.

  3. While the beans are cooking, fry the pork belly in a pan until it is crispy. Remove it from the pan and set it aside.

  4. In the same pan, fry the minced meat until it is fully cooked. Remove it from the pan and set it aside.

  5. Fry the chorizo and black pudding in the same pan until they are fully cooked. Remove them from the pan and set them aside.

  6. Cook the rice in a pot of boiling water until it is soft. Add salt to taste.

  7. Fry the eggs in a pan with a bit of butter until they are cooked to your liking.

  8. Fry the slices of bread in the same pan until they are crispy.

  9. Cut the green plantains into slices and fry them in the same pan until they are golden brown.

  10. Slice the tomato and the avocado.

  11. Serve all the ingredients on a large plate. Start with a base of rice, then add the beans, minced meat, pork belly, chorizo, black pudding, fried egg, fried bread, fried plantains, tomato and avocado. Enjoy your Bandeja Paisa.
