Banane Peze is a traditional Haitian dish made from fried plantains. The plantains are typically sliced, pressed flat, then deep-fried until they become crispy. This dish is commonly served as a side dish or snack, often accompanying meals such as griot (fried pork) or pikliz (spicy slaw). Its popularity extends beyond Haiti, with variations found in other Caribbean and Latin American cuisines.

Recipe

Ingredients:

  • 4 green plantains

  • 1 cup vegetable oil

  • Salt to taste


Instructions:

  1. Peel the plantains by cutting off both ends, then making a shallow cut along the length of the plantain. Use your thumb to pry open and remove the skin.

  2. Cut the peeled plantains into 1-inch slices.

  3. Heat the vegetable oil in a large frying pan over medium heat.

  4. Once the oil is hot, add the plantain slices and fry them for about 5 minutes on each side, or until they become lightly golden.

  5. Remove the fried plantains from the pan and flatten them using a plantain press or the bottom of a glass bottle.

  6. Return the flattened plantains to the frying pan and continue to fry them for about 2 minutes on each side, or until they become crispy and golden brown.

  7. Remove the plantains from the pan and place them on a paper towel to remove excess oil.

  8. Sprinkle the plantains with salt to taste, and serve them while they're still warm.
