Banana pudding is a dessert common in the Southern United States, traditionally made from layers of sweet vanilla flavored custard, cookies (usually Vanilla Wafers or ladyfingers) and sliced fresh bananas. It is often topped with a whipped cream or meringue topping. The dish has been popularized throughout the United States and variations include recipes with instant pudding or condensed milk. The National Banana Pudding Festival, held annually in Centerville, Tennessee, celebrates the traditional Southern dessert.
Recipe
Ingredients:
1 box Vanilla Wafers
2 cups Whole Milk
1/2 cup Sugar
1/3 cup All-Purpose Flour
1/4 teaspoon Salt
4 Egg Yolks
1/2 teaspoon Vanilla Extract
4 Bananas, sliced
1 cup Whipped Cream
Instructions:
Arrange half of the vanilla wafers in the bottom of a serving dish.
In a saucepan, mix together the milk, sugar, flour, and salt. Cook over medium heat until the mixture becomes thick and creamy.
In a separate bowl, beat the egg yolks. Gradually mix in a small amount of the hot milk mixture to temper the eggs.
Add the egg mixture back into the saucepan with the rest of the milk mixture. Cook for about 2 more minutes, stirring constantly.
Remove from heat and stir in the vanilla extract.
Pour half of the pudding over the wafers in the serving dish.
Arrange half of the banana slices over the pudding.
Repeat the layers with the remaining wafers, pudding, and bananas.
Top with whipped cream.
Refrigerate for at least 2 hours before serving.
