Bai Sach Chrouk is a traditional Cambodian breakfast dish, consisting of grilled pork marinated in garlic, soy and coconut milk, served over a bed of rice. The dish is often accompanied by a side of pickled vegetables, including cucumbers, daikon radish, and carrots. It is commonly sold by street vendors who cook the pork on a charcoal grill. The dish is well-loved for its unique blend of sweet, salty, and sour flavors.

Recipe

Ingredients:

  • 1 kg pork shoulder or pork belly

  • 5 cloves of garlic, minced

  • 2 stalks of lemongrass, minced

  • 1 tablespoon of honey

  • 2 tablespoons of oyster sauce

  • 2 tablespoons of soy sauce

  • 1 tablespoon of fish sauce

  • 2 tablespoons of coconut milk

  • 2 cups of Jasmine rice

  • 4 cups of water

  • 1 cucumber, sliced

  • 1 bunch of green onions, chopped

  • 2 tablespoons of vegetable oil

  • Salt and pepper to taste


Instructions:

  1. In a large bowl, combine the minced garlic, minced lemongrass, honey, oyster sauce, soy sauce, fish sauce, and coconut milk. Mix well.

  2. Add the pork to the bowl and mix until the pork is fully coated in the marinade. Cover the bowl and refrigerate for at least 2 hours, or overnight for best results.

  3. After the pork has marinated, heat the vegetable oil in a large pan over medium heat.

  4. Add the marinated pork to the pan and cook for about 5 minutes on each side, or until the pork is fully cooked and golden brown.

  5. While the pork is cooking, prepare the Jasmine rice. Add the rice and water to a pot and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and let the rice simmer for about 15 minutes, or until the rice is tender and the water has been absorbed.

  6. Slice the cooked pork into thin pieces.

  7. To serve, place a portion of rice on a plate, top with a few slices of pork, and garnish with the sliced cucumber and chopped green onions. Add salt and pepper to taste. Enjoy your Bai Sach Chrouk.
